Rhode Island's own gastronomical entymologist, David Gracer, visited recently with Stephen Colbert, on The Colbert Report, to discuss the ecological benefits of eating bugs (click here to see the video clip).     2008-05-0810:18:57 Thanks for the notice, NNN! The way things are going, insects will feature increasingly in our future, so we might as well get used to the idea. I'm always happy to talk with the public about the many benefits of entomophagy. I'm available for those interested in a different kind of summer picnic experience, and I'll be cooking at 32 libraries throughout the state this summer, mostly in July. Those interested can email me for details.
